easy peasy saag paneer

defrost a bag of frozen chopped spinach, then pierce the bag with lots of holes at one end and go out on the garden and alternate between whirling it round your head and squeezing it until most of the water has gone.

take it back in the house and put a goodly handful of cumin seeds in some oil on the cooker until they crackle and then add four or five  cloves of chopped garlic

once the garlic colours add 3 or 4 teaspoons of ground coriander, a heaped teaspoon of chilli powder and the spinach, season and warm through…stir every now and again (more if you were very effective at getting rid of water from the bag).

Meanwhile cut a packet of paneer into small cubes and fry until golden on all sides. A lot of supermarkets sell paneer…it’ll be near the haloumi and feta.

season the spinach with salt to taste and then add the paneer and a goodly splosh of cream…enough to stir through but not be runny.
